		<description>I still dream about your delicious Seafood Salad...daily.  If I could have you ship it to me on ice to Houston, I would.  During Ike, I stayed at The Mansion for 12 days...the Seafood Salad was consumed on at least ten of them.  Bravo!</description>

Arzak is my favorite restaurant in San Sebastian and I have dined there many times, always preferring it to Akelarre. Everything I have been served there has been more than stellar, the service has always been fabulous, and Juan Mari has been the most charming, friendly and welcoming host. 

It has been several years since I last dined at Arzak, and I am so sorry to hear that your experience didn&#039;t equal mine.</description>

		<description>Thanks, Chef. It was quite a day especially since it was Sheena&#039;s birthday, too. Muga is a great old school Rioja producer. We have it in 375s at the Mansion. If you get a chance to try an older bottle of their Prado Enea, jump at it. It&#039;s traditional Rioja at its best with earth, leather, dried cherries and iron. Lopez de Heredia is also special stuff, especially the Blanco.

I hope you&#039;ve been taking advantage of the local Basque Txakoli. The bracing acidity is a real eye-opener and it&#039;s best it its youth with that great fresh seafood.</description>

The vegetables are cooked in their own juice - first you juice the vegetable and use it like stock the same way you would cook a traditional risotto.  The vegetables are cut into small pieces - like rice -- that&#039;s the hard part.  Quite simple but clever and oh so tasty!</description>
